KTLN beat the heat - no cook recipiesWith temperatures soaring in Kalkan, nobody wants to turn on the oven to cook a meal.  So for the month of August, KTLN has come up with some great ‘no-cook’ food ideas which will be published weekly.  Here is our final recipe.

All the ingredients are available in Kalkan.

Figs with white cheese and pomegranate dressing - serves 4
At this time of year figs are at their best so try this recipe for an unusual lunchtime snack
 
Ingredients
  • 12 good size figs - either green or black
  • 250 grammes crumbly white cheese (available from any supermarket or from Kalkan market on Thursdays)
  • 1 bunch washed rocket
  • 1 small packet shelled walnuts
  • nar (pomegranate) essence - buy fresh from Kalkan market or commercially produced from local supermarkets

Method
Wash the figs and cut the top off to a depth of about 1.5 cm.  Then cut a cross through the fruit, almost, but not through to the bottom of the fig,  so that you can open it out into a star shape
 
Arrange half a dozen rocket leaves on each plate and place the opened figs on top
 
Crumble the white cheese and loosely stuff the inside of the figs with cheese
 
Scatter with half a dozen walnut halves
 
Lightly drizzle the figs and rocket leaves with the nar essence
 
Serve with crusty local bread.
